Fall is my favorite!! Food is also another favorite, when we put those together, it just doesn’t get better! What do you crave in fall foods?? Is it pumpkin? cinnamon and spice? fresh apples? soups or chili? Perhaps it is a special fall time beverage like eggnog, hot cocoa, or apple cider?? We’ll share more recipes as we go but for those pumpkin fanatics try this:

Roasted Pumpkin and Sweet Potato Pilaf
2 cups of ½” cubed, peeled, fresh pumpkin
1 ½ cups cubed, peeled sweet potato
2 tsp olive oil
1 cup diced onion
1/3 cup diced celery
2 tsp garlic
4 cups chicken broth
1 cup brown rice
2 tsp fresh sage
½ tsp ground black pepper
¼ tsp salt
1 bay leaf

Preheat the oven to 400°. Put the pumpkin and potato cubes in a jelly roll pan and bake! Stir at about 18 minutes. Bake for 35 minutes total or until vegetables are browning. Take out and set aside.
Heat the oil in a saucepan over medium to high heat. Add the onion, celery, and garlic and sauté for about 3 minutes. Add the broth and the rest of the ingredients, stir and boil. Cover and reduce heat, simmer for about 50 minutes or until rice is done. Combine with potatoes and pumpkin!
This would be super yummy with chicken or turkey and some green beans! But serve it how it suits you, we just have one promise: It is delicious.
